Cherry Bakewell Protein Balls

Need a quick, easy to make protein snack? These are perfect for travelling, snacking straight out of the fridge for a healthy snack that lasts all week long! These protein balls do not need a food processor - just one big bowl and your hands and we are good to go!
I love to have these stocked up in the fridge for me and my husband to snack on throughout the week as a pre & post-workout snack. Having a simple ingredients list makes it even sweeter for us to enjoy.
I use Huel protein powder in this recipe, but you can use whatever vanilla protein you have at home. Your chosen protein may soak up more or less moisture than mine, so if the mixture is a little crumbly, feel free to add a splash of water at a time until the texture begins to form a dough.
Make this recipe vegan by switching out the whey protein and chocolate chips for vegan alternatives!

Ingredients List
160g oats
300g smooth peanut butter
65g maple syrup
1 1/2 teaspoon almond extract
65g white chocolate chips
1-4 tablespoons water (if needed)
Method
Place the oats, peanut butter, maple syrup, protein powder, almond extract into a large mixing bowl and stir to combine. I recommend using your hands here to combine the mixture and then knead it into a dough. chocolate chips and protein powder into a large bowl and stir to combine.
If crumbly, add a spoonful of water at a time, until it begins to look like cookie dough.
Once happy with the consistency, so that you can roll the dough into balls, add in your chocolate chips and baked cherries.
Now it's time to scoop the dough and roll into small balls. I weigh the balls out to ensure they are all around 40g.
Store in an airtight container in the fridge or place them in the freezer to stay fresh for another day.
